"Not Today" es una de las últimas canciones escritas para "The Pains of Growing". Se trata de la fase que precede a la curación después del final de una relación.
Fue lanzado en Beats1 el 13 de noviembre de 2018, tercer aniversario del álbum debut de Alessia, "Know-It-All".
Alessia añadió: "Escribí esta canción durante un período muy raro y oscuro de mi vida. Sé que suena muy dramático, pero estaba sintiendo muchos sentimientos. Pasé por el final de una relación, que fue muy difícil para mí y un montón de cosas que estaban sucediendo al mismo tiempo, que me ponían en este espacio. No podía funcionar correctamente como humano, sólo sentía que no podía hacer nada, que no quería levantarme de la cama por la mañana. Siempre estaba llorando. Recuerdo que me senté en la oscuridad total, en el baño de la casa de mis padres, en mi casa técnicamente, y sólo conseguí mi guitarra y me puse a cantar esta canción. Fue casi como un empujón para mí, pero también un reconocimiento del hecho de que las cosas mejoran o mejorarán algún día. Aunque no vi la luz al final del túnel, o ni siquiera sabía dónde buscarla, sólo la idea de que algún día habría una es lo que me ayuda a hacer frente a las cosas. Porque tienes que creer que vas a estar bien".
Alessia comenta lo siguiente: "Inicialmente, cuando escribí la nota de voz inicial, era muy diferente. Era sólo acústico. Sonaba como una canción de blues, no sabía que hacer con ella. Pero John realmente hizo algo genial, agregó un tipo de influencia de la vieja escuela, pero le dio este impulso que creo que necesitaba. Pasó de ser muy miserable a ser algo esperanzador, así que aunque las letras son un poco oscuras o tristes, la instrumentación a su alrededor se siente muy ligera y esperanzada. Estuvo bien, hizo un trabajo increíble con ella".
Alessía añadió: "Conocí a John Levine en Toronto, en realidad es de allí también. Así que fue genial porque ya teníamos ese vínculo, antes de conocerlo. Y recuerdo que en el primer momento en que lo conocí, le dije: "Hola, ¿cómo estás?". Y una persona normal te hubiese respondido que estaba bien, pero él es muy honesto y me respondió: "no tan bién", yo le respondí que yo estaba igual que él. Nos unimos por la canción y por el hecho de que ambos no estábamos bien en ese momento. Lo estoy poniendo a prueba, pero es bueno, es genial que alguien sea tan abierto y honesto desde el principio, porque nadie hace eso. Me sentí muy conectada a él y le confié la canción por esa razón".
Alessia declaró en Twitter que "sentirse miserable y darse cuenta de que estaba bien tomar el sol hasta que estuviera lista para intentar ser feliz de nuevo" la inspiró a escribir "Not Today".
En un video, Elessia habló sobre la historia detrás de la canción: "Se trata de capturar esa fase intermedia y de recordarme a mí misma que las cosas mejoran, pero está bien decir "¿Sabes qué? Hoy no. Hoy necesito estar en la cama, triste, y hacer una fiesta de lástima".
